Fun Experience
I had a really fun experience this past weekend! I thought you might like to share it. I had a story featured on a blog that I've been reading for a couple years. As I stated in my personal notes in the story, Sandy's blog The Reluctant Entertainer has inspired me to look beyond my limitations. I hope you enjoy reading it!

Enjoyed reading how you reached out to other women in your community and how it has encouraged them. Your chicken noodle soup looks so yummy. I know Chicken noodle is a staple in most homes but I've yet to find a recipe that I think is a keeper. Would you be willing to share your recipe?

Homemade Chicken Noodle Soup
ReplyDeleteAdjust according to the size of your crockpot:
3 boneless, skinless chicken breasts
Sometimes I put frozen chicken breasts in the crockpot on low the night before and the next
morning - remove, shred, and add back in (also a good way to use leftovers)
1 tablespoon onion powder sprinkled over chicken as it cooks
Cut veggies approx. the same size for even cooking:
2 stalks celery
3 large carrots
1 large onion
4 medium potatoes
3 chicken bouillon cubes dissolved in enough water to cover everything in crockpot
Cook 6-8 hours on low. 1 hour or so before serving, turn crockpot on high and add:
2 cups hearty noodles (I love to use homemade style noodles in this soup)
1 cup frozen peas
Fresh parsley – this adds so much color and just makes it look special (I’ve used dried too)
Of course, additional chicken broth can be added if needed. This is a simple recipe that can be adjusted to your taste. It’s also fun to share!
